One of my favorite sweet dishes is shir berinj, an Afghan rice pudding. Short-grain rice is cooked with whole milk, butter, sugar and cardamom until it becomes soft, thick and creamy. Sometimes I add slivered almonds or pistachios.

Rinse rice and cook slowly with milk, stirring occasionally, until rice is very soft and creamy. Add butter, sugar and cardamom. Continue cooking until pudding thickens.
Serve warm or chilled, topped with almonds or pistachios if you’d like.
